a wire isn't at all needed if you can make it properly, (no offense) but every time i've made my roses, i use only marzipan or gumapaste.... you dont even need egg white unless your paste is very dry....

Wow!! Thank you VERY MUCH for sharing your wonderful technique! I'm just starting out with my little cake business and it's nice to see the experts sharing their advice....much appreciated!

The only reason the person in your story didn't get sick is because the raw egg wasn't left out to spoil first. It CAN and DOES happen! Is it really worth the chance? If you have ever suffered from food poisoning (or know someone who has) you would agree.

i should also probably mention that I use homemade marshmallow fondant of a stiff consistency to make my roses not flower paste

there is a way around it. All you need to adhere it is something tacky like a corn syrup and water mixture or maybe even a little melted clear jam. I even use plain old water. For the wire bit, if you have a flat surface you can dry each section on it without inserting anything. If you must insert something you can make your own edible "wire" by making toothpick fine sections of hardened unbreakable piping gel from orchard products.

i eat cake mixture every time my mother bakes some. That has raw egg in it and i haven't had any problems. This whole thing about raw egg is rubbish! I was watching the news a couple of years back when one of the presenters cracked and egg into a cup, then drank it then said "there is nothing wrong with raw eggs".

These flowers are NOT edible! You can't eat raw egg! and once they have a wire inserted they can not be considered edible! Not to mention you would break a tooth or 3 on the first bite! Would you eat a Picasso? or a Vera Wang design?
