Celebrating Enterprise - Le Paysan
In 19th June 2008, Wicklow County Enterprise Board organised the Celebrating Enterprise event where they presented awards to 10 of the leading enterpreneurs in the Wicklow area. The event was hosted by television presenter Anna Nolan.In this clip Thierry Peurois of Le Paysan talks about his food business, Le Paysan. Thierry Peurois is a qualifed chef, with 26 years experience in the food industry. Inspired by his father's artisan charcuterie business, he studied for 6 years at Dinard, France. He has worked in hotel management, as a personal chef, in a two star Michelin restaurant, catering business and food shop - Le Paysan in Greystones - for 10 years. Thierry closed the restaurant in 2005 but retained the brand name for the new business he set up. Le Paysan manufactures high quality, gluten free, gourmet ready meals. The range of products includes main courses, soups, desserts, charcuterie and dressings. The products are manufactured in Bray and are gluten free, which appeals to the growing percentage of the Irish population who need to avoid gluten completely in their diet, and those who prefer to consume gluten free foods as a healthy eating choice.
